Crunchy Noodle Salad Ingredients Salad:2 tbsp butter1 instant noodle3 tbsp peanuts or any nut of choice (coarsely ground)3 tbsp sesame seeds5 cups cabbage or lettuce of choice (shredded)1 cup carrots (julienned)2 cups bean sprouts3 tbsp scallions (chopped) Dressing 4 tbsp neutral tasting oil of choice2 tbsp rice vinegar1 tbsp honey2 tbsp soy sauce1/2 tsp shichimi togarashi (optional) Steps Combine all ingredients for the dressing in a jar, close tightly with a lid, shake well & sell aside.Melt butter in a large pan over medium high heat, crush noodles while still inside the package (save or discard seasoning sachet), add crushed noodles, nuts & sesame seeds.Saute, stirring frequently, until mixture is golden brown (abt 3 mins) remove from heat & let cool.Add the rest of the salad ingredients into a large bowl, add cooled toasted noodle mixture & dressing.Toss to coat & serve immediately.
