Add water in a large pot along with chopped pineapple, shallots, lemongrass, turmeric, galangal and shrimp paste. Bring it to a boil and simmer for 10-15 mins2. Add mackerel, sugar, salt and msg3. Simmer over medium heat until the fish is cooked4. Add bird eye chilies (if using) and tamarind liquid. Give another good stir and off the heat5.
