Ingredients 1 large fish head of choice3 tbsp coconut oil1 onion (sliced)3 cups water2 tbsp tamarind paste1/2 cup coconut milk Whole Spices 1/2 tsp fenugreek seeds1/2 tsp cumin seeds1 tsp mustard seeds10 curry leaves Spice Paste 1 large onion5 cloves garlic2 inch ginger3 dried chillies (soaked in hot water for 15 mins)6 tbsp fish curry powder2 tsp salt Vegetables 1 large eggplant (cut into 2 inch pieces)2 cups okra (top & bottom trimmed)3 fresh green chillies (sliced half lengthwise)2 tomatoes (quartered) Steps Blend all ingredients for the spice paste into a fine puree (add some water if needed) & set aside.In a pot, heat oil on medium high.When hot, add whole spices & fry for 1 min.Add spice paste & fry till fragrant (abt 10 mins)Add sliced onions & fry for 2 mins.Add water & tamarind, bring to a boil.Add fish head, okra & eggplant, bring to a boil.Add coconut milk, green chillies & tomatoes, bring to a boil (stirring continuously) & taste for seasoning. .Continue cooking until broth has reached desired thickness & vegetables are cooked to desired doneness.Transfer fish head to a serving bowl, add vegetables & served with rice or bread.
