Add tomato paste, cubed potatoes, shredded cabbage, beef short ribs.Then add bay leaves and whole minie bell peppers, add beef broth and bring it to a boil, then simmer until potatoes are soft.Add shredded beets towards the end and add the chopped parsley right before turning off the stove.Serve topped with sour cream and enjoy this hearty, healthy soup.Enjoy!
