White Bean Mash Ingredients Breadcrumbs1 cup stale bread (torn in chunks)1 tsp dried thyme1/2 tsp chilli flakes1/4 tsp fine sea salt2 tbsp olive oilMash3 cups cooked & drained beans (home cooked or canned)2 cloves garlic (roughly chopped)2 tbsp extra virgin olive oil (plus more for garnish)1 lemon (zested & juiced)1/4 cup cold water1/4 tsp cumin powder1 tsp fine sea salt Steps Add all the ingredients for the breadcrumbs (except for olive oil) into a blender or food processor, blitz for a few secs till they turn into course pieces.Transfer into a pan on medium high heat, add olive oil & fry till they reach desired doneness (I like mine deep golden brown), set aside.Add beans into the blender or food processor along with the rest of the ingredients, blitz till it reaches desired consistency (I like mine slightly chunky) & taste to adjust seasoning.Divide bean mash between 4 shallow bowls or plates, sprinkle over the crunchy breadcrumbs, drizzle with more extra virgin olive oil, chopped parsley & lemon wedges (optional) Source : www.instagram.com
