Soybean Falafel Ingredients 1/2 cup dried soybeans1 tsp baking soda2 cups water1/2 cup dill1/2 cup parsley1/2 cup mint1/2 cup scallion3 cloves garlic1 lemon (zested)1/2 cup flour of choice (I used chickpea flour)1 tsp baking powder1 tsp cumin powder1/2 tsp coriander powder1/4 tsp cayenne pepper1/2 tsp salt3 tbsp sesame seeds (optional)2 cups vegetable oil (for frying) Steps Rinse soybeans until water runs clear, combine with baking soda & water in a large bowl, soak overnight.In a food processor pulse all fresh herbs & garlic until finely chopped.Rinse & drain soybeans, add into the food processor, along with lemon zest, flour, cumin coriander, salt & cayenne pepper.Pulse until mixture resembles coarse oatmeal, transfer into a bowl, cover with cling wrap & refrigerate for 1 hr to allow ingredients to swell & combine.Allow falafel mixture to sit for 10 mins at room temp, add baking powder & mix evenly.Finally, form mixture into balls or patties of 2 inches in diameter & sprinkle with sesame seeds.Heat oil to 180 deg C, add falafel & cook in batches, until golden brown (abt 3 mins)Transfer onto a wire rack to drain excess oil, finish frying the rest & enjoy!
