Soybean Hummus Ingredients 1/2 cup dried soybeans4 cups water2 cloves garlic1/2 tsp cumin powder2 tbsp tahini2 tbsp ice water2 tbsp extra virgin olive oil4 tbsp lemon juice (freshly squeezed, to taste)1 tsp salt (to taste) Steps Soak dried soybeans in 3 cups of water overnight.When ready to boil, transfer into a pot (with all the water) & heat on medium high.Cook for 1 hr (add more water if needed) & boil until skins have peeled off, beans are soft & can be crushed between 2 fingers.Meanwhile, in a food processor or high powered blender, combine lemon juice, garlic & salt, process until garlic is very finely minced & set aside for 15 mins.Add tahini & process until mixture is thick & creamy (scraping sides & bottom of machine)Add cumin & drained soybeans, drizzle in the olive oil slowly while processing & blend until mixture reaches desired consistency (add more ice water if necessary)Taste to adjust seasoning & scrape hummus into a serving bowl or plate, top with garnishes of choice, & serve with sides of choice.
