White Bean Chili Ingredients 2 cups white beans (freshly boiled or canned)4 cups broth of choice2 tbsp extra virgin olive oil1 cup onion (diced)4 cloves garlic (minced)1 cup leek (thinly sliced)1 tbsp ground cumin1&1/2 tsp ground coriander1/4 cup jalapeno chillies (minced)1 cup green serrano chillies (finely diced)1 cup green bell peppers (finely diced)1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)1 cup corn kernels (fresh or frozen)1 tbsp lime juice Garnish green chillies of choice (sliced)cilantro or parsley (chopped)sour creamtortilla chipslime wedges Steps Blend 1 cup of beans with 1 cup of broth & set aside.Heat oil to a large pot over medium high, add onion & garlic, sauté till onion turns translucent.Add leek, cook for 2 more mins.Add cumin & coriander, continue to cook, stirring frequently, for 1 min.Add all the chillies & saute for 2 mins.Add remaining broth, puréed beans, salt & pepper, bring to a boil.Reduce heat to low & simmer for 15 mins.Add whole beans, bring back to a simmer & cook until beans reach desired doneness.Add corn & lime juice, taste to adjust seasoning.Ladle chili into bowls & serve with garnish of choice.
