Thai Mango Salad

Thai Mango Salad Ingredients

* 2 large mango* 1/2 red pepper* 1/2 onion* 1 cucumber* handful of roasted cashews or peanuts* Cilantro and mint, chopped

Dressing

* 3 tbsp lime juice* 1 tbsp olive oil* 1 tsp garlic, chopped* 1 tbsp soya sauce* 1 tbsp honey* 1 red chili crushed

Method

Add everything under the dressing in a mason jar and shake really well to combine.Julian cut all the vegetables.Add them in a big mixing bowl and sprinkle chopped cilantro and mint on top.Mix the dressing in, adjust seasoning.Serve sprinkled with nuts and a few leaves of mint.
