Ingredients 1⁄3 cup avocado oil1⁄2 cup maple syrup2 eggs2 cups mashed sweet potato1⁄4 cup water or any milk1 tsp baking soda1 tsp vanilla extract1⁄2 tsp salt1⁄2 tsp ground cinnamon1 3⁄4 cup sprouted spelt wheat flour ( or all purpose flour)1 cup cranberry sauce Instructions; 1.Preheat oven to 325 F and grease a 9X5 loaf pan2.In a large bowl, whisk oil and maple syrup together. Add the eggs and beat well, then whisk in the mashed sweet potato and milk.3.Add baking soda, vanilla extract and cinnamon and blend well. Lastly, stir in the flour just until combined.4.Pour half the batter into the greased pan. Add a layer of cranberry sauce and pour the rest of the batter on top of the sauce.5.Place a few spoons of cranberry sauce on the top and use a toothpick to make the swirl. Place the loaf pan on the center rack and bake for 55-65 minutes, and check by inserting a toothpick into the center. It is done when the toothpick comes out clean.
