Blue Cheese Sauce1/4 cup blue cheese of choice (Danablu, Stilton, Gorgonzola, etc)1/4 cup yoghurt or sour cream1/4 cup mayonnaise1 tsp lemon juice1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)1/4 cup milk or water (optional)Salad2 cups lettuce of choice (chopped)1 cup carrot ribbons (use a vegetable peeler, I mixed orange & purple carrots)1 cup cucumber ribbons (use a vegetable peeler)1 cup red bell peppers (chopped)1 apple or pear (sliced)1/4 cup nuts of choice (roasted)1 tsp blue cheese (crumbled)feel free to use whatever vegetables you prefer or have access to

Steps

Add blue cheese into a bowl, use the back of a spoon to crumble it, add the rest of the ingredients & mix well.Add more milk or water to thin the sauce further (optional), taste to adjust seasoning & set aside.Arrange vegetables in serving bowls/plates, pour desired amount of dressing, top with nuts & crumbled blue cheese.
