Lamb Chops Ingredients Lamb Chops12 lamb rib chops (cleaned off excess fats & “frenched”)1 tsp olive oil1 tsp cumin seeds (toasted)1 tsp salt1/2 tsp cayenne Steps Grind toasted cumin seeds into a fine powder, combine with salt & cayenne then marinate the chops for at least 1 hr.When ready to cook, remove chops & let them come to room temp (abt 20 mins)Heat a pan over medium high & add olive oil.Working in batches, cook chops until medium rare (abt 3 mins per side) or slightly longer for medium well.Transfer to a plate, tent with foil & let them rest while you start plating.Spoon enough mint sauce (recipe below) onto base of serving plate, arrange chops on top & garnish with more mint leaves (optional) Mint Sauce 2 tbsp lemon juice2 tbsp extra virgin olive oil1/2 tsp honey1 cup mint (tightly packed & chopped)1/2 tsp salt1/4 tsp ground black pepper Steps Place mint leaves in a mortar & pestle or food processor, pound till it reaches desired consistency.In a bowl, combine mint with the rest of the ingredients for the sauce, taste to adjust seasoning & set aside.
