Download ImageNasi Goreng Pattaya Ingredients4 cups cooked rice (chilled overnight)2 tbsp oil1 cup onions (finely diced)6 cloves garlic (finely chopped)2 fresh red or green chillies (sliced)3 tbsp tomato paste2 tbsp oyster sauce1 cup carrot (diced)1 cup cabbage (thinly sliced)1/2 cup peas (fresh or frozen)1/2 cup corn (fresh or frozen)1 tsp salt (to taste)1/2 tsp ground white pepperOmelette (1 Portion)2 eggs2 tsp milk1/2 tsp AP flour1/4 tsp salt1/8 tsp ground white pepper1 tsp oil (for frying)Garnishtomato (quartered)cucumber (cut into half moons)lettuce (sliced)spring onion (chopped)tomato ketchup or chilli sauceStepsAdd oil in a large pan or wok on medium high heat.Add onion & garlic, fry for 7 mins & add chillies.Add tomato paste & oyster sauce, stir for 2 mins.Add vegetables (or chicken/prawns if preferred) & saute for 5 mins.Add rice, salt & pepper, mix well & stir continuously.Taste to adjust seasoning & remove from heat.For the omelette, whisk all ingredients (except oil) in a bowl.Add oil into a frying pan over medium heat, when hot, pour omelette mixture, spread evenly & cook until it begins to set on the bottom.Once it turns light golden, transfer carefully with a spatula onto a serving plate.Place 1 small bowl of tightly packed fried rice in the centre of omelette, wrap carefully (like a packet) & use another plate to flip it over.Garnish with chopped vegetables, herbs & sauces of choice.
