Kuzu Dana Köfte (Lamb & Beef Meatballs) Ingredients 250 g ground lamb250 g ground beef1 cup onion (grated)3 cloves garlic (grated)1/2 cup red bell pepper (finely diced)1/2 cup parsley or cilantro (finely chopped)1/4 cup breadcrumbs (toasted)1 tsp sumac1 tsp pulbiber (Turkish chilli flakes)1/2 tsp dried thyme1/2 tsp dried mint1/2 tsp cumin powder1/2 tsp allspice powder1 tsp salt1/2 tsp ground black pepper Steps Soak wooden skewers in water for 1 hr.Preheat oven to 200 deg C & line a baking tray with parchment paper.Combine all ingredients in a large bowl, using your hands, mix until well combined & mixture is a bit sticky.With wet hands, divide into portions, working with one portion at a time & rewetting hands as necessary to prevent sticking.Press meat mixture around skewers into sausage shapes about 4 inches long, arrange on lined baking tray, cover loosely with plastic wrap & refrigerate for at least 2 hrs.Grill for 7 mins then flip over for another 7 mins to cook the other side.Cook köfte until it reaches desired doneness & serve immediately with sides of choice.
