Scoop out the avocado into a large bowl and mash with a fork. Add the oil, garlic, red onion, spring onion, lemon juice, chilli flakes, herbs and salt and pepper and mix together to form your guacamole. Cover and set aside in the refrigerator.2. Slice your halloumi into thick slices and place in the grill for 3-4 mins. Alternatively toast on a frying pan for around 2-3mins until golden brown.3. At the same time toast the bread and spread a small amount of butter onto each slice.4. Spread the guacamole onto the toast and top with chopped cherry tomatoes and rocket leaves.
