Green Moong Dal (Mung Bean Curry) Ingredients 1/2 cup dried mung beans2 cups water1 tbsp oil1/2 tsp cumin seeds1/4 tsp mustard seeds10 curry leaves1 cup onion (finely diced)1 green chilli (sliced)1/2 tsp ginger (grated)1/2 tsp garlic (grated)1/2 tsp chilli powder1/4 tsp turmeric powder1/4 tsp coriander powder1 cup tomatoes (finely diced)1/2 tsp garam masala1 tsp salt1 tbsp lemon juice Steps Wash & soak dried mung beans for 4 hrs.Heat a pot on medium high heat & add oil.When hot, add cumin & mustard seeds, when they start to pop, add curry leaves & stir for 30 secs.Add onion & chilli, cook till onion turns translucent.Add ginger & garlic, cook for 1 min then add chilli, turmeric & coriander powder, stir well.Add mung beans & tomatoes, cook for 15-20 mins.Add salt & cook until beans are tender & gravy reaches desired consistency.Add garam masala, lemon juice, stir, taste to adjust seasoning & remove from heat.Garnish with cilantro or parsley just before serving with roti or rice.
