Gratin De Champignons (Mushroom Gratin) Ingredients Topping1 cup breadcrumbs of choice1 tbsp parmesan cheese (freshly grated)1/4 tsp salt1/8 tsp ground pepperMushrooms4 cups fresh mushrooms of choice (quartered or halved)2 tbsp butter1 tbsp olive oil1 cup onion (sliced)2 cloves garlic (minced)1 tsp dried thyme1/2 tsp salt1/4 tsp ground black pepper1 tbsp AP flour2 tbsp sour cream or yoghurt1 cup melty cheese of choice (mozzarella, gouda, swiss, etc) Steps Preheat oven to 200 deg C.Place breadcrumbs in a food processor & blend on high speed until fine.Add cheese, salt & pepper, pulse then set aside.Heat a pan over high heat, add butter & olive oil.When hot, add onion & garlic, sauté for 5 mins until golden.Add mushrooms & leave it alone for 2 mins.Add thyme, salt, pepper, stir & cook until all the moisture dispelled from mushrooms gets reabsorbed (abt 5-7 mins)Add flour & cook for 2 mins (continuously stirring)Add cream, stir & taste to adjust seasoning.Spoon mixture into a heatproof container, sprinkle melty cheese & breadcrumbs then bake for 15 mins or until crust is golden brown.Sprinkle toasted breadcrumbs for added crunch & chopped parsley (optional), serve immediately.
