Download ImageEgyptian Ful Medames Ingredients2 cups fava beans (skinless, canned or precooked if using dried beans)1&1/2 cups water2 tbsp olive oil1/2 cup onion (finely diced)2 cloves garlic (finely minced)1 tsp cumin seeds (toasted)1 tsp salt1/2 tsp ground black pepper1 tbsp tahini1 tbsp lemon juiceSauce2 tbsp extra virgin olive oil1 tbsp lemon juice1 clove garlic (finely minced)1 tbsp jalapeno (diced)1 tbsp parsley or cilantro (chopped)StepsHeat pot over medium high, add olive oil & onions.Sauté until onions start to brown & caramelize, add garlic & fry for 30 secs.Add cumin, salt & pepper, stir for 30 secs.Add fava beans & water, bring to a boil, reduce heat & cook for 20 mins (stirring frequently)Remove from heat, allow to cool slightly & mash beans until mostly broken down but still chunky.Add tahini & lemon juice, mix well.Meanwhile, combine all the ingredients for the sauce in a small bowl.Pour 1/2 of the sauce into bean mixture, stir & taste to adjust seasoning.Transfer into a serving bowl/plate, top with remaining sauce & serve with fresh herbs, vegetables, lemon wedges & bread of choice.***TIPS****Drain overnight soaked beans & cook in plenty of water for 1 hr or more, until beans are tender & skin easily peels off Source : www.instagram.com
