Cowboy Caviar Ingredients

1 red pepper1 yellow pepper1 big tomato1 small can of corn1 can of mixed beans, 400g (could be black beans, black eyed peas…)1 avocadoA bunch of parsley leaves (or cilantro)You can also add a small onion

Dressing

Juice of 1 big lemon1 tbsp honey1/2 tsp cumin1 tsp salt1/4 cup olive oil

Steps

Chop all the veggies and add them to a salad bowl along with the beans and corn.Mix the dressing ingredients together well and pour over the salad and stir to combine.Taste to adjust the salt or lemon juice to your liking.Serve right away or chilled in the fridge. Enjoy!
