Sumac wings are chicken wings that are coated in a spice mixture made with sumac, a tangy and lemony Middle Eastern spice. The wings are typically baked or fried until crispy and then served with a dipping sauce, such as a garlic yogurt sauce or tahini sauce. Sumac wings are a delicious and flavorful appetizer or main dish that are perfect for parties or gatherings. The tangy and slightly sour flavor of sumac pairs well with the richness of the chicken wings, making them a tasty and unique option for any occasion.

Ingredients

24 chicken wings

For The Marinade

3 tbsp of olive oil1.5 tbsp of sumac1.5 tsp of ground coriander1 tsp of ground cumin1 tsp of salt1 tbsp of chilli powder (optional)1/2 tsp of all spice1/4 tsp of ground cinnamon2 tbsp of chopped parsley (optional)

Instructions

1. In a bowl, mix together all the marinade ingredients.2. Place the chicken in the bowl and massage the marinade into the chicken. Leave to sit, covered, for minimum of half an hour.3. Preheat oven to gas mark 6/200c.4. Place the chicken on a lined baking tray and pour over any excess marinade.5. Bake for 30-40 minutes, baste the chicken several times during baking to get a deeper colour.6. Serve hot!
