Whole Wheat Sesame Steamed Buns Ingredients

50g black sesame seeds250g sprouted whole wheat flour250g organic all purpose flour @kingarthurbaking2 tsp active yeast2 tsp baking powder1 1/4 cup – 2 Tbsp lukewarm water

Instructions

1. Toast the sesame in a pan to release the fragrance for about 5 minutes. Remove and grind into a powder2. Put all ingredients with the sesame powder in a stand mixer for about 10 mins using the dough hood on low setting until a smooth dough is formed.3. Leave the dough in a greased bowl covered with plastic wrap and let it proof to double the size, about 60-90 minutes4. Punch the proofed dough down to release the air and divide it evenly into 12 pieces5. Knead and fold the dough into a round shape and create a smooth outer surface6. Place the buns in a lined steamer (parchment paper with some holes or non stick silicone liner will do), rest in the oven with the light on and a cup of hot water for about 20 minutes7. Put the steamer over a wok with cold water in it, turn up the heat, once start boiling, drop the heat to medium and steam for 12 minutes8. Turn off the heat and leave the buns in for another 5 minutes before opening
