Waffle Fries Ingredients 5 medium russet potatoes1 tsp flaky sea saltvegetable or canola oil (for deep frying) Steps Fill a large bowl with cold water & ice.Scrub potatoes under running water & peel of skins.Using a mandoline set to waffle cut or hand held crinkle cutter, carefully slice potatoes into 1/4 cm thickness.Start the first cut crosswise then rotate potato 90 deg in between each cut, transfer into the ice bath & set aside for 30 mins.Heat oil in a pot over medium heat (abt 130 deg C)Meanwhile, drain potatoes, lay on paper towels & pat dry.Layer a baking tray with kitchen towels too.Working in batches, add fries into hot oil, stirring with a slotted spoon to prevent sticking & fry for 3 mins.Using the slotted spoon, transfer fries onto baking tray & arrange in a single layer.Increase heat to medium-high (abt 180 deg C) & place a wire rack nearby.Working in batches, fry waffle fries until golden brown & crispy (abt 3-5 mins), flipping individual slices to ensure even browning.Transfer waflle fries onto wire rack, sprinkle immediately with salt & serve with sauce of choice.
