Veggie Casserole

Ingredients For The Veggies (You Can Use Any Veggies You Like).

1 medium sweet potato1 medium onion2 potatoes1 medium zucchini1 medium carrot1 head of garlic cloves (peeled and left as a whole)

For The Chicken.

4 Quarters Of The Chicken (Leg And Thigh)- Or Any Desired Cut Of Chicken

Spices

Salt, pepper, cinnamon (literally that’s it!)- about a tablespoon of each*** Don’t overdo the spice, we want the colors to stay light and keep the flavors simpleVegetable oil of your choice (about 1/2 cup)

Steps

Mix the spices with your oil and set asideCut your veggies and put them into an oven safe pan. Add half the oil and spices and mix.Now, clean your chicken as you usually do.Pat dry it with paper towels (this step is important to achieve the crispy chicken results)Then add the remaining oil mix. Rub it well.Add the chicken on to top of your veggiesCover with aluminum foil and cook in a preheated oven (also important to To preheat the oven to achieve the crispy chicken)On 350 degrees. If you have convection oven- use that! Of not normal oven worksCook for 45 min- uncover the pan. Cook for additional 20 min then broil if neededServe with rice or breadEt bon appetite!

**Note For Extra Crispy Chicken Follow The Following Steps:

1- bring your chicken to room temperature before placing it in the oven.2- preheat your oven.3- make sure the chicken is dry before marinating.
