Vegan Stir Fried Mushroom Noodles Ingredients 3 packets dried instant noodles (discard seasoning packets)1 tsp sesame oil2 tbsp vegetable oil (or other neutral flavoured oil)2 cups mushrooms of choice (sliced)2 garlic cloves (minced)2 cm ginger (minced)1 cup onion (sliced)2-3 fresh red or green chillies (sliced)2 tbsp light soy sauce (Note 3)1 tbsp Hoisin sauce1/2 tsp ground black pepper Steps Bring a pot of water to a boil, black instant dried noodles for 1 min, remove, rinse under cold water, drain, drizzle with sesame oil & set aside.Heat vegetable oil in a wok or large pan on medium high heat.Add mushrooms & cook till they start to caramelise & water released during cooking has been reabsorbed.Add garlic, ginger, onion & chillies, sauté for 2 mins.Add parcooked noodles plus the rest of the ingredients, stir well, taste to adjust seasoning & cook till noodles have reached desired doneness.Ladle into serving plates or bowls, garnish as desired & enjoy!
