Download ImageIngredients300 g dried egg noodles of choice2 tbsp oil1 large onion (sliced)3 cloves garlic (minced)1 inch ginger (minced)2 cups cooked protein of choice3 cups vegetables of choice (cabbage, carrot, celery, bell peppers, etc)1/2 cup spring onions (cut into 3 cm pieces)5 fresh red chillies (sliced, use less to make it less spicy)Sauce2 tbsp oyster sauce3 tbsp dark soy sauce2 tbsp chilli oil1 tbsp rice vinegar1 tbsp sesame oil1 tsp honey (or sugar)1/2 tsp ground white pepperStepsBlanch dried noodles till a few mins short of al dente (according to packaging instructions), rinse with cold water, drain & set asideMix all the ingredients for the sauce in a bowl & set aside.In a large pan or wok, add oil, turn the heat to medium high.Add in onions, garlic & ginger, stir fry for 2 mins.Add chillies & vegetables, saute for 3 mins.Add noodles, protein, drizzle on the sauce & saute on high heat for 3 mins.Finally, add spring onion, saute on high heat for 1 min.Taste to adjust seasoning & remove from heat.Transfer noodles onto individual serving plates, garnish (optional) & serve immediately.
