Download ImageShrimp Mango & Coconut Milk Curry Ingredients1 1⁄2 lb raw, peeled shrimp1 pkg Sugar Roti Fish Nu spice packet3 Tbs coconut oil1 medium onion1 large red pepper2 garlic cloves, minced1 jalapeño pepper, seeded and sliced lengthwise (optional)2 cups chopped mango1 can coconut milk1 tsp lime zest2 Tbs fresh lime juiceSalt and pepperChopped cilantro leavesSliced Green onionCooked Rice or QuinoaSteps1. Cut onion in half, slice thinly into half round pieces. Cut pepper into long thin strips.2. Melt oil in large fry pan. Add Sugar Roti Fish Nu spice packet. Sauté 1 minute. Add onions, red pepper & optional seeded jalapeno pepper. We left the jalapeño out as we have one delicate palate in the household. Sauté an additional 2 minutes over medium low heat. Add garlic.3. Sprinkle shrimp with salt and pepper. Toss into sliced onion mixture. Sauté 1 minute.4. Add coconut milk, mangoes, zest and lime juice. Stir well. Cook another few minutes until warm. Adjust with salt & pepper. Top with fresh sliced green onion & chopped cilantro. Serve with rice, or quinoa, extra lime wedges & jalapeño. Source : www.instagram.com
