Ingredients 1 leg of lamb (3-4kg)3 onions, chopped in half150mL of apple cider vinegarSalt, to tasteOlive oil, to tasteSpices (detailed below)Water, to taste Spice Mix 4 bay leaves1 tsp of black peppercorns2 star anise2 tbsp of almonds4 cardamom pods2 large sticks of cinnamon1 mace1 tbsp of cloves2 tbsp of cumin seeds1 tsp of fenugreek seeds1 tsp of fennel seeds2 tbsp of coriander seeds Method 1. Roast the spices until golden brown and your kitchen smells wonderful2. Grind the spices into a powder3. Score the lamb leg on both sides4. Generously rub apple cider vinegar on all sides of the lamb leg5. Generously rub salt all over the lamb6. Massage the spice mix all over the meat7. Refrigerate the meat overnight8. Sear the meat with a tiny bit of olive oil until it gets a nice golden brown colour9. Place meat in baking dish with onions, cover with foil and bake at 180C for 2 hours10. Once done, remove the onions and juices and add these to a blender with some extra water11. Blend until smooth and reduce on a stove until desired consistency is obtained12.
