Ingredients 1 kg whole chicken1/2 tsp Salt1/2 tsp black pepper1-2 tbsp olive oil Stuffing And Under Chook 1 small garlic bulb, halved1 small Onion, halved1 small Lemon, halved1 sprig rosemary Butter Mixture (Premixed) 3 tbsp melted butter1 tsp dried parsley1 fresh sprigs rosemary (or 1 tsp dried)1 fresh sprigs thyme (or 1 tsp dried)3 garlic cloves, gratedHalf a lemon juicePinch of salt and pepper Gravy 2 tbsp flour300ml chicken stock1/2 tsp dark soy sauce (for color, optional)Chicken juices and oil from roasted chickenSalt sugar pepper Steps 1. Preheat oven to 220 C2. Pat dry chicken, and start loosen chicken skin using spoon (breast and thigh parts)3. Spoon in 1/2 portion of the butter mixture under the chicken skin evenly and rub the rest of the butter mixture on the external back and front skin evenly4. Stuffed half an onion, garlic bulb, used lemon and rosemary sprig inside the chicken cavity5. Tie chicken drumsticks with string and tuck in the wings6. Layer half of a lemon, onion, garlic bulb on a baking dish or roasting pan7. Place the chicken on top, and drizzle olive oil, sprinkle salt and pepper8. Roast for 10 mins and lower the heat to 180C and roast for 45-50mins. Chicken is cooked when internal temperature reach 75C9. Gravy: Use the oil and juice from the roasted chicken, add into a pan with flour and cook over med-low heat, until bubbly and turns slightly brown, add stock, dark soy sauce and seasonings, simmer for few mins and serve sauce with the roasted chicken Source : www.instagram.com
