Ingredients 2 fresh salmon fillets, skin & bones removed1 sunrice microwave brown rice1⁄2 red & green capsicum, cut into large squaresBroccoli floretsMiso marinade3 tsp red miso paste3 tsp rice wine3 tsp soy sauce1 tsp caster sugar2 tsp sesame oil4 chives, chopped Steps Wash and prepare your salmon, I cut mine into cubes about 3cm.Mix the marinade ingredients then add the salmon, you can use it straight away or let it marinate for 30mins or longer.Add the salmon and capsicum to the skewers as shown.Preheat your grill to 2000c, and place your skewers on a lined tray, you can use a rack and place them on the 2nd or 3rd highest shelf (each oven is different and the heights of shelves vary so keep an eye on them)I cooked mine for 5 minutes in total and flipped them 1⁄2 way through the cook.While they are cooking I heated the rice in the microwave only take 40secs and boiled the Broccoli on the stove.Plate up with a dipping sauce I chose soy and wasabi and sprinkled the salmon with Nanami Togarashi and fresh coriander leaves.Enjoy!
