Mini Pizzas

Ingredients For Pizza Base

2 cups flour2 Tblsp milk powder2 Tblsp sugar1 tsp yeast1 tsp salt2 Tblsp oil2 Tblsp softened butter3⁄4 cup warm water or more if needed

Method

In a bowl of a stand mixer add flour, milk powder, sugar, yeast and salt mix to combine.Add oil and water mix on low speed till the dough comes together.Add more or less water if needed. Increase the speed and knead the dough till the dough gets nice and elastic add in the softened butter and knead for a further minute or two.Till the dough is nice smooth and elastic. Cover and the dough rise for an hour or till double in size.Knock down the dough divide in two portions. Lightly dust the work surface with flour and roll the dough in to desired thickness.Cut using a cookie cutter to the size you like. Place on a baking tray lined with parchment paper/foil.Prick the base with a fork few times to avoid puffing. Repeat with the remaining dough. Bake at 180C for 5-6 minutes not longer. Remove from oven top with your favourite sauce (steers tikka, chilli garlic, mochachos or any peri peri sauce) top with your favourite toppings. (Cooked chicken, green, yellow or red peppers, deseeded tomatoes etc) top with cheddar/mozzarella cheese i used @lancewood.co.zaadd olives, feta or pickled Jalapeños if desired sprinkle dry parsley/oregano. Bake again for 5-8 minutes just till the cheese melts and the base turns lightly golden.Serve hot.

To Freeze

Let them cool completely then store them in an airtight container. Make sure to use cling wrap in between layers if you’re stacking them in rows.Freeze for up to 2 to 3 months.You may freeze them unbaked too but I find it easier to do it this way.You can cook chicken in any of your favourite spices.
