For the garam masala mix, roast together cumin, coriander, cardamom pods, black peppercorn, cloves, nutmeg, dried red chilli until the flavours release and are aromatic. Place in a spice grinder and blitz till grounded2. You can use any carrots but I used the trio coloured carrots from Waitrose. Peel and slice them halves/quarters3. For the marinade add a generous amount of oil, enough to coat all the carrots. Combine that with garlic, honey, salt, pepper, rosemary and garam masala4. Coat the carrots with the marinade ensuring it’s all covered. Place in the oven to roast at 180C for 20 minutes.
