Ingredients 200 gr oyster mushrooms, cut into smaller pieces150-200ml ice waterOil for deep frying Flour Mixture 1 1/4 cup all purpose flour3 tbsp cornstarch1 tsp salt (adjust to taste)1/2 tsp Pepper1 tsp paprika powder (optional) Sauce 4 salted egg yolk, mashed3 stems curry leaves3 tbsp butter3 garlic cloves, minced5 bird’s eye chili, thinly sliced (adjust to taste)3/4 cup evaporated milk1/2 tsp chicken stock powder1/4 tsp salt (adjust to taste)1 tbsp condensed milk Steps 1. Rinse mushrooms, squeeze out water2. Combine flour ingredients, separate out 7-8 tbsp of flour mixture into another bowl and mix with ice water, stir until thicken, see the consistency in video3. Heat oil, coat mushrooms with wet flour mixture then dredge onto dry flour. Immediately fry it into the hot oil over medium heat until golden. Fry in batches4. Double fry over highest heat until golden brown and crispy for another 30 secs or 1 min, again in batches. Remove5. Over low heat, Melt butter and fry garlic, chilies, curry leaves until fragrance. Add salted egg and stir until bubble start to form.6. Add salt, chicken powder, condensed milk and evaporated milk. Stir until sauce slightly thicken, add fried mushrooms and toss to coat well.
