Download ImageWatch Video Dahi Bhalley / Barey IngredientsFor barey* 1 cup maash dal (urad daal)* 1/2 cup moong dal* 1/2 inch ginger* 1 tsp salt* 1/2 tsp cumin* oil for fryingFor Soaking* 2 cup hot water* 1⁄2 tsp saltfor yogurt:* 2 cup yogurt* 2 tbsp sugar* 1⁄2 tsp saltfor serving:* Tamarind sauce* chilli flakes* chaat masalaMethod* Wash and soak lentils for 5 hours.* After soaking drain the water and transfer lentils to the grinder along with cumin, ginger and salt.* blend into smooth paste adding water as required. add minimal amount of water to prevent the batter from turning watery.* mix well using the whisk for 10 minutes in one direction. Drop the tiny amount in water and if the batter floats it’s ready. If it sinks whisk more.* now with wet spoon or using hand, drop a spoonful of batter into the hot oil.* keeping the flame on medium, fry until the bhalla turns golden brown and crisp.* drain off the bhalla over kitchen paper to remove excess oil.* in a large bowl take hot water and add 1⁄2 tsp salt* drop the hot fried bhalla into the water and dip completely. soak for 10 minutes, or until the vada absorbs water.* squeeze off the water and transfer to plate.* Whisk yogurt, sugar and salt together.* For plating place bhalla first and pour some yogurt on top.
