Grill on medium heat for 12-18mns.Tip: right when you take the chicken off the grill, place the skewers in a pot, close the lid tightly and keep them locked for 10 minutes.The vapours and moisture inside the pot will keep the chicken moist.For The Garlic Sauce(toum)All you need is a few ingredients, a food processor and a bit of patience.•5-6 garlic gloves (peeled)•1 cup oil (I use canola)•1 egg white•1 tsp salt•1/2 a lemon juicedStepsAdd garlic in food processor, add 1tsp salt and pulse until finely minced. Add egg white and pulse well until smooth.While keeping your processor running, alternate lemon and oil in a slow steady stream (be patient this part takes 10mins). The final consistency should be light and fluffy.For The SandwichSpread 1 teaspoon garlic sauce in the centre of the pita bread, add chicken, cabbage mix, fries & pickled cucumbers (we love the ‘Mechaalany’ brand from @mideastfoods).I add oil&zaatar on each side of the pita for some extra flavour, wrap tightly and press on the grill.You can dip them in garlic sauce or even hummus between each bite!
