Better-than-takeout Mongolian Chicken Ingredients 600g chicken cubed3 tbsp avocado oil (or vegetable oil)1/4 cup cornstarch 2tsp2 garlic cloves minced1 tsp ginger minced1/2 cup soy sauce1/3 cup water1/4 cup brown sugarSliced vegetables (green onions, peppers, carrots, broccoli…)Salt and pepper Steps Place the cubed chicken in a bowl and add 1/4 cup cornstarch, tossing them to completely coat. Heat oil on medium high and cook the chicken in one layer a few minutes on each side until golden (don’t overcrowd the pan, cook in batches if necessary). Season them with salt and pepper. Once done, place the cooked chicken on a kitchen towel on a separate plate. In the same pan, add a bit of oil and cook the vegetables just until tender. Add garlic and ginger and cook for 30 seconds. Stir in soy sauce, water and brown sugar. Mix 2 tsp of cornstarch with 1 tbsp cold water and add them to the pan. Bring to a simmer until the sauce starts to thicken.
