Beef Sausages With Sauerkraut & Fried Shallots Ingredients 4 sausages of choice8 tbsp sauerkraut2 tbsp shallots (thinly sliced)4 hotdog bunsbutter (for brushing)oil (for frying) Steps Place enough oil in a small pot on medium heat, fry shallots till golden brown & crispy then place onto plate lined with paper towels to absorb excess oil.When cooled, store in an airtight container while preparing the other components of this dish.Lightly butter buns, heat for abt 1 min per side then remove.Pan fry or grill sausages, turning occasionally, until marked & cooked through (abt 7-10 mins), place sausages in the buns.Add sauerkraut to pan & heat for 2 mins (stirring continuously), divide into 4 portions & place on top of sausages.Transfer onto serving plates/bowls, sprinkle fried shallots & serve with sides of choice. Sauerkraut 1 small cabbage (abt 8 cups)5 tsp coarse grained or kosher salt1 tbsp caraway seeds Steps Slice cabbage into desired thickness, add salt & massage for 10 mins.Add caraway seeds, mix, tightly pack into clean jars, let it sit at room temp for 14 days then chill in the fridge.
