Homemade Queso (Cheese) Dip

Ingredients

1 teaspoon oil1/2 a yellow onion, diced1 poblano pepper, deseeded & diced1 jalapeno pepper, deseeded & diced4 cloves of garlic, minced1/2 cups of half & half8 ounces of sharp cheddar cheese4 ounces of pepper jack cheese4 ounces of cream cheese, cubed1 teaspoon cumin powder1 teaspoon of chili powderSea salt, to taste

Method

1. Add the oil to a skillet. Add the diced onion, jalapeno, and poblano. Sprinkle the veggies with a little sea salt and cook for 10 minutes, stirring occasionally, then turn off the heat and set aside.2. Add all the cheese in the sauce pan. pour in the half & half.3. Melt these cheese on low heat. stirring constantly to prevent clumps.4. Once all the cheese is fully incorporated and smooth. Gently fold in the cooked onion, peppers, garlic, diced green chiles, cumin powder, chili powder, and cayenne pepper.5. Taste the mixture and add sea salt to taste.6. Remove from heat and serve immediately with chips or your favorite dipping foods.
