Vegan Irish Stew Ingredients 2 tbsp olive oil1 cup onion (chopped)1 cup celery (chopped)5 cloves garlic (minced)2 tbsp AP flour2 cups vegetable broth2 cups Turkish spicy turnip drink (acılı şalgam) or non alcoholic beer of choice2 cups potatoes (chopped)2 cups carrots (chopped)2 cups mushroom (quartered)3 tbsp tomato paste2 bay leaves1 tbsp honey or brown sugar1 tsp dried thyme1 tsp salt (to taste)1/2 tsp ground black pepper (to taste) Steps Heat a large pot over medium high, add olive oil.When hot, add onion, celery & garlic. When onion has turned translucent, sprinkle in flour, stir well & cook for 1 min.Add vegetable broth, scrape bottom of pot, add potatoes & bring to a boil.Add in beer, carrots, tomato paste, & rest of the ingredients.Bring to a boil, add mushrooms & cook for 15 mins until vegetables are fork tender, but not mushy.Taste to adjust seasoning & when stew reaches desired consistency, remove bay leaves, garnish with chopped parsley (optional) & serve hot with crusty bread.
