Vegan Ginger Fried Rice Ingredients 4 cups cooked rice (chilled overnight)4 tbsp neutral oil of choice2 tbsp ginger (finely minced)2 tbsp scallion (chopped, white & green parts separated)1/2 cup carrots (diced)1 cup red & green bell peppers (diced)1/2 cup corn kernels (fresh or frozen)1 tbsp light soy sauce1/2 tsp salt (to taste)1/4 tsp ground white pepper (to taste)1 tbsp sesame oil Steps In a wok or large pan, heat oil on high.When hot, add ginger & fry for 1 min (stirring continuously)Add white part of scallions & carrots, fry for 1 min.Add bell pepper & fry for 1 min.Add rice, corn kernels, soy sauce, salt & pepper, stir to mix everything well.Taste to adjust seasoning, remove from heat, drizzle sesame oil & green part of scallions, mix well.To serve, ladle fried rice into serving plates or bowls & garnish with finely julienned ginger (optional) Source : www.instagram.com
