Set in the fridge while prepare other ingredientsCombine sauce ingredients. Set asideCombine flour mixture in a container. Set asideTake out the fish from the fridge, add cornflour and eggs. Combine and mix evenlyHeat good amount of oil in a deep pan. Add fish into the flour mixture (few pieces at a time), close and shake to coat. Over medium to high heat, fry fish in few batches until golden brown about 5 mins. Do not over crowd the pan. Drain excess oil over a wire rackHeat 3 tbsp of oil in a wok or a large pan, over high heat, stir fry garlic and ginger until golden, add onion and bell pepper, stir fry briefly for 15-30 secs then add sauce mixture, let it simmer until the sauce thicken, quickly stir in pineapple and fried fish, toss to combine and coat well with the sauce.
