Squid Ink Pasta With Garlicky Calamari Ingredients 400 g or 1 pkt dried pasta of choice4 tsp squid ink (fresh or bottled, intensity of colour will vary)2 tbsp olive oil7 cloves garlic (minced)2 tbsp fresh red chillies (sliced)3 cups calamari rings (fresh or frozen)1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste) Steps Bring a pot of water to a boil, salt it well & add pasta.Cook pasta based on the duration indicated on packaging till 1 min short of al dente, drain, transfer back to the same pot & reserve 1 cup of pasta water.Into the pot of pasta, add squid ink & stir well over low heat, add enough reserved pasta water to achieve a sauce with desired consistency & remove from heat.Heat olive oil in a large pan on medium high.Add garlic, sauté for 30 secs then add calamari.Cook for 1-2 mins without stirring till they start to get some caramelisation at the sides, flip over & add chillies, salt & pepper.Cook for 1-2 more mins till calamari reaches desired doneness, taste to adjust seasoning & set aside.Add 1 tbsp of cooked minced garlic & chilli mixture into pot of squid ink pasta, stir & divide them equally among 4 plates.Top pasta with remaining garlic chilli mixture, calamari rings & garnish with chopped parsley.
