500 gr chicken feet, boiled till half-cooked1 cm ginger, crushed1 cm galangal, crushed2 lemongrass, crushed3 kaffir lime leaves2 bay leaves1 spring onion, sliced300 ml waterCooking oil

Mashed Spices

2 big red chilies12 shallots5 garlic pips4 candlenuts1 cm turmeric1 tsp coriander seeds1 tsp salt or to taste1/2 tsp sugar

Instructions

1. Saute ginger, galangal, lemongrass, leaves, and the mashed spices in hot cooking on a pan until fragrant. –2. Put the chicken feet in. Stir them. –3. Pour the water. Bring them to boil until well-cooked. –4. Add the spring onion in. Turn off the heat. Served.
