Spam Katsu Omelette Curry Ingredients

* Spam/luncheon katsu1-2 slices of Spam or beef/chicken luncheon meat1 egg 1 tbsp flour 1 tbsp water, whiskPanko breadcrumbOil for deep frying* Omelette egg2 eggs, whisk1 tbsp Butter* Curry Sauce250 ml beef stock or water1/4 onion2 small garlic cloves, minced1 cube curry roux1 tbsp ketchup1 tbsp Soy sauce1 tsp Sugar2 tbsp butterSalt if needed

Steps

1. Curry Sauce: melt butter, saute onion until translucent then add garlic2. Add beef stock/water, simmer3. Add ketchup, soy sauce, sugar, curry roux, salt, stir and simmer for 2-3 mins until the sauce thicken, set aside4. Spam katsu: coat sliced spam/luncheon meat with the egg mixture, and dredge into panko bread crumbs5. deep fry until golden brown and crispy6. Omelette egg: over low heat melt butter in a non stick pan, pour egg mixture. Slowly push edges to the centre to create texture like shown in the video7. few secs before it set, remove and serve it on top of rice, along with curry sauce and spam/luncheon katsu
