Singapore Chili Tofu Ingredients Fried Tofu3 packs egg tofu (140g each), cut into bite size pieces1 cup cornflourOil for deep frying Chili Sauce 1 lemongrass, bruised1 tbsp ketchup1 tbsp chili sauce / sriracha2 tbsp tamarind liquid1 tsp fermented soybean paste1 eggs, beaten1/4 cup cornstarch slurry400 ml water2 tsp Sugar1/2 tsp salt1 tbsp oil Spices 4 fresh long chilies3 thai chili (optional)A thumb sized ginger6 small shallots3 garlic cloves1/2 tsp shrimp paste2 tbsp oil Steps 1. Fried tofu: Coat tofu with corn flour2. Heat generous amount of oil in a pan, fry tofu over medium heat until golden (fry in batches) drain and set aside3. Sauce: Blend spices ingredients until smooth and set a side4. Heat 1 tbsp oil in a pan, stir fry spices mixture until darken in color for 2-3 mins5. Add lemongrass fermented soybean paste, ketchup, chili sauce stir fry for a min6. Add water, let it simmer, add tamarind liquid, salt, sugar and chicken powder. Remove lemongrass7.
