Then remove the skin and roughly chop.Once the peppers are done, cook the chopped onions in olive oil on medium heat until soft.Add the garlic and cook for a minute or 2. Add the tomato paste, salt, black pepper, herbs and mix.Add the chopped red peppers and 1-2 cups of water. Stir and simmer for 10 minutes.Once done, blend until creamy in a food processor or hand blender.Once you blend your sauce, add the parmesan and mix until the cheese melts.Taste to adjust salt and pepper to liking.Mix in the cooked pasta and serve warm with more parmesan. Enjoy!Optionalfor spicy lovers, add cayenne or chili flakes to taste.you can always add a dollop of heavy cream at the end to make it rich and creamy.adding feta cheese with the parmesan is also a delicious option.
