Chicken Marinade Ingredients 2 medium chicken breasts1 1/2 tbsp honey1 1/2 tbsp dijon mustard1 tbsp olive oil1 garlic clove gratedSalt and pepperPlace all ingredients in a small bowl and mix well. Pour over the chicken and marinate in fridge around 10-15 minutes if possible. Place in a preheated oven on 200 degrees for 35-40 minutes or until the chicken is fully cooked. Let cool 10 minutes before you cut in strips. Pour the sauce over for a nice glaze and extra flavor. Lemon Orzo (4 Servings) 1 lemon for juice and zest1 cup orzo2 1/2 cups vegetable brothHandful of roughly chopped fresh spinachSalt and pepperDried oregano, dried thyme1 tbsp olive oil(Optional to add at the end for extra creaminess: 1 tbsp heavy cream and 1/2 cup parmesan) Steps Heat the olive oil in a large skillet on medium heat and mix in the orzo tossing to coat completely. Let cook a few minutes on medium high until the orzo is toasted and slightly browned (stirring frequently). Add in broth, dried herbs, lemon zest and mix. Bring to a boil, cover and simmer around 13-15 minutes or until the orzo is cooked. Once done, lower heat and mix in the spinach, half lemon juice, salt and pepper and stir for a couple minutes then remove from heat (if using cream and parmesan, add now too).
