Marinate the chicken pieces in the magic spice mix and set aside. In one bowl whisk the eggs and in another bowl mix together the cornflour, baking powder, garlic granules and salt and pepper.2. In a large pan, heat the oil until hot and prepare your chicken for frying. To prep the chicken, coat each chicken piece first in the egg mixture, then in the cornflour mix and place directly into the oil. Cook the chicken until crispy/golden brown and set aside to cool.3. In a large wok, heat a few tablespoons of oil and fry the garlic and ginger for a few minutes. Add in the chillies and peppers and continue to fry until the peppers soften slightly.4. Mix in the sauces and another tbsp of spice mix with the cornflour slurry. Add in the chicken and mix on a high flame.5. Garnish with spring onions and serve immediately. Source : www.instagram.com
