To make the biscuit base, blitz the Oreos and mix in the melted butter. Spoon the mixture into each of the cups and press down firmly before setting aside.2. For the filling, melt the chocolate in a large bowl and add the soft cheese, icing sugar and vanilla and whisk until it’s smooth. Slowly whisk in the double cream until the mixture is thick and can create stiff peaks. Do not overmix!3. Fill an icing bag with the mixture and pipe into the cups evenly, leaving a little space for the top layer. Refrigerate so that they begin to set.4. For the chocolate layer at the top, heat the double cream and slowly add this to a bowl of the broken up remaining chocolate, stirring slowly until combined and runny. Spoon this mixture into another icing bag and fill the cups to the top.5. Leave the cheesecakes in the fridge overnight to set, before decorating with the crushed twirls and edible leaf.
