Download ImageIngredients1/4 cup olive oil8 cloves garlic (sliced)2 tsp smoked paprika1/2 tsp salt (to taste)4 cups chicken or vegetable stock2 large eggsCroutons2 cups bread (cut into 1 inch cubes)4 tbsp olive oil1 tsp smoked paprika1/2 tsp garlic powder1/2 tsp saltStepsPreheat oven to 200 deg C.Toss all the ingredients together, spread out in single layer on a lined baking tray, bake for 15 mins or until browned & set aside to cool.In a large pot over medium low heat, add olive oil & garlic.Cook garlic until fragrant (but not brown) for 3 mins, add salt & paprika, stir well to combine.Add stock, bring to a boil, reduce heat & simmer for 10 mins.In a small bowl, crack the eggs & whisk.Slowly drizzle the eggs into the soup & cook for 2 more mins.Taste to adjust seasoning, ladle into serving bowls, top with a few croutons, sprinkle with parmesan & serve with remaining croutons on the side & olives (optional) Source : www.instagram.com
