Tomato Egg Curry (Anda Masala) Ingredients 3 eggs (hard boiled & cut in half lengthwise)1 tbsp oil1/4 tsp cumin seeds1/8 tsp mustard seeds1 sprig curry leaves1 cup onions (chopped)1 green chilli (finely sliced)1 cup tomatoes (chopped)1 tsp red chilli powder1/4 tsp turmeric powder1/2 tsp salt (to taste)1/4 cup water2 tbsp coconut milk1/4 tsp garam masala Steps Heat oil in a pan on medium high, add cumin & mustard seeds, let them crackle for 10 secs then add curry leaves.Add onions & cook till they start to turn translucent.Add tomatoes, turmeric & salt, cook until tomatoes break down.Add water, bring to a bowl & cook until gravy reaches desired consistency.Add coconut milk & garam masala, mix well, taste to adjust seasoning then add halved eggs.Remove from heat, stir gently & let eggs rest in the gravy for 2 mins.Garnish with sliced green chillies or tomatoes (optional) & serve with rice or roti of choice.
